Add all ingredients except brandy to the blender. Blend until smooth. Pour into saucepan and gently heat, whisking constantly until it reaches a simmer and thickens. Remove from heat, let cool for 30 minutes and add in brandy. Blend with an immersion blender. Pour into a jug and place into the fridge to chill for a few hours until completely cold. Stir or shake before serving. Top with a sprinkle of cinnamon. Serves 5.
Healthy Pumpkin Spice Latte
3/4 Cup of Blue Monkey Coconut Milk Beverage 1/4 cup of water 2 tblsp. of Pumpkin Puree (not pumpkin pie blend) 1 tsp. Ground Cinnamon 1/4 tsp. Ground Clove 1 pinch of Ground Nutmeg 1 shot of espresso or coffee 1/2 tsp. Vanilla Extract 1 can of Blue Monkey Organic Coconut Cream
for the whipped topping (refrigerate overnight)
Bring Blue Monkey Coconut Milk Beverage and water to a simmer. Add in pumpkin and all other ingredients and whisk. Bring to a light
simmer and then serve your favorite mug.
Topping: remove can of coconut cream from fridge, open and take the solid portion of the coconut cream and add to a bowl or stand-mixer to
whip till a "whipped" cream consistency is formed.
Top your latte with your vegan coconut whipped cream and sprinkle with cinnamon! Serves 1.
