Quick Vegan Coconut Nog Recipe

Ingredients to Serve 5
  • 1 can of Blue Monkey Organic Coconut Cream
  • 2 cups of Coconut Milk Beverage
  • ½ cup of Raw Coconut Flakes or Raw Cashews
  • 1 tsp. Vanilla Extract
  • 1 tsp. Ground Cinnamon
  • ½ tsp. Ground Nutmeg
  • ¾ cup of Brandy, Bourbon, or Rum

How to Make Vegan Coconut Nog With Coconut Cream?

Add all ingredients except brandy to the blender. Blend until smooth. Pour into a saucepan and gently heat, whisking constantly until it reaches a simmer and thickens. Remove from heat, let cool for 30 minutes, and add in brandy. Blend with an immersion blender. Pour into a jug and place into the fridge to chill for a few hours until completely cold. Stir or shake before serving. Top with a sprinkle of cinnamon.
